Turkey Burgers


I know I said last week that the next recipe would be beef. Well, I guess not. But, it's not chicken either.

I read a post recently on Perez, about an Oprah show that featured her favorite summer things. A few hours later, my Mom called & said, did you watch Oprah's favorite things?! Thankfully, I happen to dvr Oprah.
The episode was disappointing. She didn't give away enough stuff!
I did, however, take away from it a great new way to make turkey burgers. I've modified the recipe a bit, based on my tastes, and what I had available. Some of her proportions & quantities were way off.
This is what I did...

First, you need 1 and a 1/2 granny smith apples, a stalk of celery, and a scallion.

Peel the apple, and dice all of the ingredients. Then heat about 2 tablespoons of canola oil over medium/high heat. Saute, until tender...about 5 minutes. Let the mixture cool while you prepare the other ingredients.

Next up...2 lbs. of ground turkey breast, parsley, a lemon, and some chutney. I used mango chutney. But, the recipe calls for Major Grey's.

In a large bowl, combine the turkey with about a quarter of a bunch of fresh parsley, minced.

Then add the zest of half a lemon,

the juice of half a lemon,

2 tablespoons mango chutney,

and some salt & pepper, to taste.

Using your hands, thoroughly combine all of the ingredients. The mixture will be more *wet* than a typical beef hamburger. Form the mixture into six patties. Refrigerate for 2 hours. This step is necessary to help the burgers stay together. Otherwise, they will crumble apart on the grill.

Preheat a grill. If you don't have a grill, they can be cooked on a grill pan, or in a saute pan. Oil the grates & cook 7 minutes.

Flip & cook another 7 minutes. You definitely want to cook poultry thoroughly. But, overcooking ground turkey breast makes it very dry. So, try not to overcook them.

This burger tastes as good as it looks. And it's so much better for you than a beef burger! It can be served with the typical condiments...like, tomato, lettuce, mayo, ketchup, or whatever you usually put on your burger. I had mine with some extra chutney on top, and that's it. It was delicious! My DH, who has a pretty strong aversion to any ground poultry product, liked them. The kids gobbled them right up...seriously.

I plan on making *mini* turkey burgers for my son, Miles', birthday party next month. I'll get to use my new mini burger press...

That's so smart to add Granny Smith apple to the filling!

I think I would have left the mango chutney to use as the topping, but it all looks so very good!

I just found your post in TasteSpotting! It's funnny that we both did the same burger and got published almost side by side! Hahaha
I really like your version, they look a lot sturdier than mine. Mine fall apart in the grill, so I just do them in the oven.
