Block Island 2009


We just returned home last night from a wonderful 10 day vacation. Three days in Block Island with friends & 7 days in York Beach, Maine with family.
Getting back to reality is very hard...especially with the start of school for the Bozos a day away. The following are some shots from the Block Island portion...Maine will follow {at some point soon}.

Signing off...


for 10 days of heavenly vacation!
We'll be in Block Island for 3 days with friends & then off to Maine for the remainder with family...staying in this lovely house.
Internet connections will be iffy at best. If I can post, I will. I plan to take lots of photos & cook lots of good food!

Lemon Fusilli with Arugula

I saw Ina's show on the Food Network a few weeks ago, where she was making this dish. It looked so delicious & I've been wanting to try it.
Last night, I decided to make it. It's so good & surprisingly, even with the cream, it's very light tasting. I love the creamy lemon sauce. It's the perfect summer evening meal, or side dish & it helps that it's pretty kid-friendly too!

Grilled Chicken with Honeydew Salsa

My sister, Emily is in town for the next few weeks. Which means I won't be home in my own kitchen. I will be spending most of my time with her at my Mom's house.
Tonight, I was in charge of dinner. My sister's request was something light & healthy. I was flipping through some of my cooking magazines, trying to get some inspiration & this is what we chose. It was delicious!

Kitchen Tool of the Week...


I really lucked out in the kitchen tool department. My MIL is a fabulous cook & has been very generous over the years. Knowing that I too love to cook, she has given me many a necessary kitchen tool. Including many of the big purchases. Like, my Cuisinart Food Processor.
I have a much older model than the one pictured here. But, they are built to last & I'm sure I will have it for a very long time.
I use mine for making dips, bread & pastry dough, salad dressings, shredding or slicing vegetables or cheese, & pureeing soup or sauces. It's also great for making baby food.

Roasted Almond Ricotta Pesto with Olives


As soon as I saw the title of this recipe, I wanted to make it. I love the combination of ricotta & pesto used in it. Almonds don't pack as much flavor as using walnuts, or pine nuts in pesto. But, they have a great texture.
The addition of Kalamata olives is something I had never even thought to try. But, it's amazing.

Minted Apricot Couscous


I haven't been cooking much lately. The Bozo's are keeping me very busy & it's been so hot, that I just haven't had the energy to get creative in the kitchen.
Which is why a recipe like this suits me perfectly. It requires only one pot {easy clean-up} & cooks very quickly {less heat in the kitchen}.
It's a great summer side dish with some fresh grilled fish, chicken, or lamb.

Green Salad


For me, one of the best things about summer is how easy & delicious it is to eat healthy. I made this simple green salad using peas from our garden, along with cucumbers & lettuce from Mima's.
