Meatloaf with Chili Sauce


This is my standby meatloaf recipe. It's adapted from one I found in Everyday Food magazine. It's usually what I turn to when I have no idea what to cook for dinner. I almost always have all the ingredients on hand & it's easy.

The ingredients are 3 lbs. of ground beef, 2 small onions, 6 cloves of garlic, 2 eggs, good quality parmesan cheese, Heinz chili sauce, some sandwich bread, milk & parsley.

Preheat the oven to 375 degrees & begin by mincing the garlic & onion.

I like to saute mine first, so that there is less chance the Bozo's will detect them. But, you don't need to. If you do, let it cool down to room temperature afterward.

Next, mince a 1/2 cup of parsley, grate a 1/2 cup of cheese & lightly beat the eggs.

Take 4 slices of the sandwich bread. It can be any kind.

Cube it up.

Put it in a large mixing bowl & and add a 1/2 cup of milk.

Stir it up & let it sit for a minute.

Then add the beef,

the cheese, parsley, eggs,

the onions & garlic,

and finally, a 1/2 cup of chili sauce, salt & pepper.

Using your hands, mix it all up.

Form it into a loaf on an ungreased baking sheet. Brush it with some more chili sauce & bake for about 1 hour, 15 minutes...or, until it reaches 160 degrees. Then, let it rest for 10 minutes,

slice & serve.

oh, my god. i made this tonight because i was feeling the first stirrings of fall. it was awesome. it was way too much meat, but can't wait for cold meatloaf sandwiches for the next week. i love your site and LOVE the heinz chili sauce. thank you so much! i hope you don't mind if i link your site on my blog. no one reads it anyway...

Yeah haven't seen that Heinz Chili sauce around anywhere unfortunately. 8•(

Really? My local supermarket [Stop n Shop] has it next to the ketchup.
In fact, you could probably sub ketchup...or hold up because I have a new meatloaf recipe coming soon!
