Egg Salad


I was inspired to make some egg salad last week with some of our leftover Easter eggs. My MIL makes the best egg salad sandwich I've ever had & my recipe is an attempt at making something close to hers {I don't have her recipe}.
I have made many sandwiches over the past few years...for catering jobs, showers, etc. This sandwich is always a big hit. My kids also love egg salad & I try to make it often, for their lunch boxes. I use sweet curry powder in this, because it has no heat & is suitable for kids palates. But, any curry powder can be substituted.

Begin by hard boiling 6 large eggs. Peel them & separate the yolks from the whites. Add the yolks to a mixing bowl & mash them up with a fork.

Chop the egg whites and add them to the yolks.

In a separate, small mixing bowl, combine a 1/3 cup mayonnaise, 1 teaspoon Dijon mustard, a small pinch of kosher salt {mustard is salty, so don't overdo it!}, a 1/4 teaspoon freshly ground pepper & an 1/8 teaspoon of sweet curry powder. Whisk the dressing to combine.

Add it to the chopped eggs & stir.

Serve on a sandwich with some lettuce {if desired}...or bacon, or sprouts, or some swiss cheese, or some sun-dried tomatoes.....the list is endless.

Egg Salad

Makes 2 cups

6 hard boiled, large eggs
1/3 cup mayonnaise
1/4 teaspoon freshly ground pepper
1/8 teaspoon sweet curry powder
1 teaspoon Dijon mustard
a tiny pinch of kosher salt

Peel the eggs & separate the whites from the yolks. Add the yolks to a mixing bowl & mash them with a fork. Finely chop the egg whites & add them to the yolks.
In a separate, small mixing bowl whisk the mayonnaise, pepper, sweet curry powder, Dijon mustard & salt together. Add the dressing to the chopped eggs & stir to combine.
Serve immediately, or store in a airtight container, refrigerated for up to a week.

Looks soo good.. I have some eggs left from easter also... I might just have to make this. Thanks for the idea!!

That looks wonderful! I also made egg salad this week and it was so good. I like to add diced caramelized onions and smoked paprika to mine. I love how you separated and diced yours so cleanly! I usually just throw everything in a bowl and mash with a big fork. I think I like your method better though... lol!

This looks delicious, I don't like curry, but I wonder if I would like it. Have to try and see.
